Getting Nicole to decide what she wants to eat in the morning can be quite a hassle. It’s not deciding what to eat but rather how she wants to flavor it. Our day off breakfasts are usually one of three things: hash, waffles or pancakes. We just pick one of those three things and flavor it however we want.
So these waffles started out as pumpkin waffles but thanks to a recent trip in Linvilla Orchards; we had an excess of apples and apple cider on hand. After she added some pumpkin puree to the batter, Nicole suddenly decided that she wanted apple waffles. Rather then start all over again, we just figured out some easy ways to add apple elements. Here we had some cider maple syrup and diced apples to the mix. The results were very good and if anything, I think the cider syrup is going into my book of quick tricks.
You can make these with out the apples in the mix if you’re looking for a solid pumpkin waffle recipe. The nuts we used for garnish can be found in our Spiced Apple Cupcakes! post. We do love breakfast on our days off and we hope that you do too.
