Well things have picked up pace here in our little apartment. Nicole has started a new job where she has to work the lunch shift. So for her that means up at 5:30 am out by 6:15 am and arrive before 7:00 am leave at 3:30 pm and in bed by 9:00-10:00 pm. Not a bad life, you still get out of work pretty early and catch a little of the sun, but that’s the complete opposite schedule of mine and what she used to work. This leaves little time for us to be creative and create some food for you. If you’re on our Instagram, you have probably seen some things we have been playing around with, as we typically make multiple dishes within our one day off together.
These Breakfast Nachos were not originally going to be a recipe we posted to our page. However, you all had such an overwhelming response on Instagram we thought it would be wise to show how we made it. Truth be told, we just made regular old nachos and slapped bacon and an egg on it and called it breakfast. I’m suddenly reminded of that Portandia skit “Put a Bird on it” We love a sunny side up egg on well, pretty much everything and call it breakfast. You got some left over pasta and nothing left for breakfast? Put an egg on it! Boom! Breakfast pasta! No one is doing that! Chinese food + egg = Breakfast Chinese! I could go on with terrible ideas but I think you get the picture. This Franken-nacho was the result of Nicole waking up and demanding nachos. I wanted eggs and so we compromised and made these. A win-win for us.
This recipe is not much of a recipe but more of an idea. We let you know what we put on ours but the ingredients for yours can be up to you. Make as little or as much as you want, with a few handfuls of whatever you like and it will really be your own.
Breakfast NachosPrint This
- 1 Bag Tortilla Chips
- Cheese of your choice (We used cheddar jack)
- Handful or Two of Black Beans
- Handful Diced Tomatoes
- 1 Sliced Jalepeno
- Handful Diced Onion
- 1 Ear of Corn, Cut off the Cob
- Cooked, Crumbled Bacon
- Dollops of Sour Cream
- Eggs (As many as you like)
- Handful of Cilantro
Preheat your oven to 400 degrees. Line a baking sheet with foil (you will thank yourself for this during clean up). Spread out a thin layer of chips on the baking sheet, sprinkle with cheese, add another layer of chips then more cheese, beans, onions, jalapeno and corn. Bake until the cheese is melted.
While the chips are in the oven, cook off your eggs (this is also when you can cook the bacon).
When the chips come out of the oven, top with the remaining ingredients: tomatoes, bacon, egg, sour cream, cilantro.
Next, eat those delicious things!!
Anyhow, the fall is coming/has arrived, which is our favorite season. So be prepared for the onslaught of fall themed recipes and pictures! For the month of October we will be doing all pumpkin recipes and November will be our Countdown to Thanksgiving. You all seemed to like that last year so we are doing that again.
