Fall is here! Fall is here!
Happy fall everyone, I am always excited when fall comes around because it is my favorite season. The leaves have just started to change before I even had a chance to realize what was happening. A few days ago, I stepped on a leaf that reminded me of the following Garfield® comic strip from my childhood.
T’is the season for apples, pork, squash, spiced nuts and cider. Using those, you already have my perfect meal; well unless you add some bacon and crispy Brussels sprout leaves. I mean you can not go wrong with putting pork on pork. It is the season for hearty foods and time to kick away those light foo foo summer salads. Bring the grains and spices back into my life!
Although this post has nothing to do with pork, we bring to you a great recipe. A spiced cake cupcake with an apple filling, maple brown buttercream frosting and salted candied pecans is another delicious way to start off the season, I guess…
Alright, my mind has been swayed. These are awesome, no, were awesome (there are none left). Nicole actually did all the cooking and photography on this one. I’m just the lowly writer and taste tester on this post. Let me tell you there is something magical about sweet maple brown butter cream and salty crunchy toasted pecans. Then add a moist spiced cake with a gooey apple filling. I mean just look at the thing:
Nicole definitely out did herself on this one. I will confess, these were gone far too quickly for a healthy human bean. Oh well, it was worth it. I guess I better get on with the recipe so all of you can self indulge as well.
Well there you have it, a lovely fall cupcake recipe. Feel free to use certain parts of this recipe, the spice cake is really good, and so is the frosting. I tend to look at recipes like a butcher.
